Method
Preparation of the Seasoning Mix
- In a medium-sized mixing bowl, whisk together cornmeal, flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper until evenly distributed.
- If not using immediately, transfer the mix to an airtight container and store in a cool, dry place for up to 1 month.
Preparing the Fish
- Rinse the fish fillets under cold water and pat them dry with paper towels.
- Pour buttermilk or beaten eggs into a shallow dish and dip each fillet to coat evenly.
Coating the Fish
- Press each fillet into the seasoning mix, ensuring both sides are coated thoroughly.
- Let the coated fillets rest on a wire rack or plate for 5–10 minutes.
Frying the Fish
- Heat 1–2 inches of vegetable oil in a large cast-iron skillet to 350°F (175°C).
- Fry the fillets in batches for 3–5 minutes per side, until golden brown and crispy.
- Remove the fillets with a slotted spoon and let them drain on paper towels.
