  • 2 pieces chicken breasts, poached and shredded Poach in seasoned water or broth for flavor.
  • 4 cups chicken broth Use low-sodium if preferred.
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 2 cups kale or spinach Feel free to mix or match greens.
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • to taste salt and pepper
  • for garnish Fresh herbs Optional for garnish.

Cooking Steps
  1. In a large pot, combine the chicken broth, diced carrots, celery, and onion. Bring it to a boil.
  2. Once boiling, reduce the heat and let it simmer until the vegetables become tender, which should take about 10-15 minutes.
  3. Stir in the shredded chicken, minced garlic, thyme, rosemary, and your choice of kale or spinach.
  4. Let everything simmer together for an additional 5-10 minutes to blend those delightful flavors.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh herbs if desired.

Notes

Store in airtight containers; keep in the fridge for up to 4 days or freeze for up to 3 months. Label containers with the date for easier navigation.
