Ingredients
  

Peanut Butter Egg Mixture
  • 1 cup creamy peanut butter Can substitute with crunchy or almond butter.
  • 1/3 cup coconut flour Can substitute with almond flour or oat flour.
  • 1/4 cup maple syrup Can substitute with honey or agave.
Chocolate Coating
  • 1 cup chocolate chips (dark or semi-sweet) Use vegan chocolate chips for a vegan version.
  • 1/2 tablespoon coconut oil

Method
 

Preparation
  1. In a medium-sized mixing bowl, combine the creamy peanut butter, coconut flour, and maple syrup. Stir until you have a smooth mixture.
  2. Roll the peanut butter mixture into 1-inch balls and flatten them into oval shapes.
  3. Arrange the ovals on a parchment-lined cookie sheet and place them in the freezer for 30 minutes to set.
Chocolate Coating
  1. Meanwhile, melt the chocolate chips with the coconut oil in a small bowl, heating in the microwave in 30-second intervals, stirring in between until completely smooth.
  2. Using two forks, coat each frozen peanut butter egg in the melted chocolate. Allow the excess chocolate to drip off.
  3. Transfer each egg back to the parchment paper and allow them to set for a few minutes. Drizzle more melted chocolate on top for an extra touch.
Serving
  1. Refrigerate the eggs until you're ready to serve.

Notes

Store in an airtight container in the refrigerator for about a week. They freeze well, just separate layers with parchment paper to prevent sticking.
