  • 1 cup long-grain rice Can substitute with brown rice for a healthier option.
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • to taste Salt and pepper
  • 1 cup mixed vegetables (optional) Add your favorite vegetables for a nutritious boost.
  • Chopped green onions for garnish

Method
 

Preparation
  1. Season the chicken: Sprinkle garlic powder, onion powder, smoked paprika, salt, and pepper over the chicken thighs.
  2. Sear the chicken: Heat a skillet over medium heat and add a bit of oil. Sear the chicken for about 3–4 minutes per side until nicely browned. Remove the chicken from the pan and set it aside.
  3. Mix the sauce: In a bowl, combine the BBQ sauce, honey, soy sauce, and minced garlic.
Cooking
  1. Toast and cook the rice: In the same skillet, toast the uncooked rice for 1–2 minutes, stirring frequently. Add in the chicken broth and half of the BBQ sauce mixture. Stir well to combine.
  2. Simmer: Return the chicken to the pan, pouring the remaining sauce over the top. Cover and let it simmer on low heat for about 15 minutes.
  3. Add vegetables: If using, stir in the mixed vegetables, cover, and cook for another 5 minutes or until the rice is tender and the chicken is thoroughly cooked.
  4. Final touches: Allow the dish to sit for 5 minutes before serving. Garnish with chopped green onions and enjoy!

Notes

Leftovers can be stored in an airtight container in the fridge for 3-4 days. For freezing, portion the chicken and rice into freezer-safe containers, where it will last for 2-3 months. Reheat in the microwave or stovetop, adding a splash of chicken broth.
