Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup Honey BBQ sauce
For the Potatoes
  • 2 pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • 1/2 cup grated Parmesan cheese
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper, then brush with Honey BBQ sauce.
Cooking Chicken
  1. Grill the chicken for 6-7 minutes on each side or until cooked through.
Preparation of Potatoes
  1. Meanwhile, preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the halved baby potatoes with olive oil, garlic, Italian herbs, salt, and pepper.
  3. Transfer the seasoned potatoes to a baking sheet and roast them in the oven for 20-25 minutes, until golden and crispy.
  4. Remove from the oven and sprinkle with Parmesan cheese, returning to the oven for an additional 5 minutes.
Serving
  1. Serve the grilled chicken with the cheesy garlic Parmesan potatoes immediately.
  2. Drizzle additional Honey BBQ sauce over the chicken for extra flavor.

Notes

To store leftovers, allow the chicken and potatoes to cool completely. Place them in an airtight container and refrigerate. Can be kept for 3-4 days in the fridge.
