Main Ingredients
  • 4 large large potatoes, peeled and diced
  • 1 medium medium onion, chopped
  • 3 cloves cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or milk Use for a creamier texture
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme (optional)
  • 1 cup shredded cheese (optional, for topping)
  • to taste Green onions or chives for garnish

Method
 

Preparation
  1. Peel and dice the potatoes.
  2. Chop the onion and mince the garlic.
Cooking
  1. Add the diced potatoes, chopped onion, minced garlic, and broth to the Instant Pot.
  2. Close the lid and set the valve to sealing. Select the 'Soup' setting or manual pressure for 8 minutes.
  3. Once cooking is complete, carefully release the pressure and open the lid.
  4. Use an immersion blender to blend the soup until smooth, or blend small batches in a regular blender.
  5. Stir in the heavy cream or milk, and add salt, pepper, and thyme if using. Mix well.
  6. Taste and adjust the seasonings if needed before serving.

Notes

For added flavor, sauté the onion and garlic in the Instant Pot before adding the potatoes and broth. Use different types of potatoes for varying tastes.
