Method
 

Preparing the Ingredients
  1. Cut the beef into bite-sized chunks, trimming excess fat if necessary and season lightly with salt and pepper.
  2. Heat oil in a pot over medium-high heat and sear the beef until browned on all sides. Remove and set aside.
  3. Peel and cut onions, carrots, and potatoes into large, uniform chunks. Sauté the onions in the same pot until translucent, then add carrots and potatoes.
Making the Roux
  1. In a small pan, melt butter over medium heat.
  2. Gradually add flour, stirring continuously to form a smooth paste.
  3. Cook the mixture for 5–7 minutes, or until it turns a light golden color.
  4. Stir in soy sauce, ketchup, and Worcestershire sauce for added flavor and remove from heat.
Combining the Stew
  1. Return the seared beef to the pot with the sautéed vegetables.
  2. Add 4–5 cups of beef or vegetable stock to cover the ingredients and bring the mixture to a boil.
  3. Reduce the heat to low and simmer for 45–60 minutes, or until the beef is tender.
  4. Scoop a ladle of hot broth from the pot and gradually whisk it into the roux to thin it out.
  5. Stir the diluted roux back into the pot, mixing well to combine and simulate for an additional 10–15 minutes.
Final Touches
  1. Adjust seasoning with salt, pepper, or soy sauce as needed.
  2. Serve the stew in bowls, garnished with fresh parsley or chopped green onions for a pop of color.
  3. Optional: Letting the stew rest overnight can enhance the flavors when reheated.
