Ingredients

Cheese Sauce Ingredients
  • 2 tablespoons Butter (Unsalted for better control of seasoning)
  • 4 ounces Cream Cheese (Can substitute with dairy-free cream cheese)
  • 1/4 cup Heavy Whipping Cream (Use coconut cream as a low-carb alternative)
  • 1 cup Shredded Cheddar Cheese (Sharp cheddar for a more robust flavor)
Main Filling Ingredients
  • 1 pound Ground Beef (Can substitute with ground chicken or turkey)
  • 2 tablespoons Taco Seasoning (Use homemade or low-sodium versions)
Wrap Ingredients
  • 4 pieces Low-Carb Tortillas (Brands like Mission Carb Balance or almond flour tortillas)
  • 1 cup Sour Cream (Substitute with Greek yogurt for a lighter version)
  • 1 cup Lettuce (Shredded iceberg or romaine)
  • 1 medium Tomato (Can replace with bell peppers or omit for fewer carbs)
  • 1 cup Extra Cheddar Cheese (Consider adding pepper jack for extra spice)
  • 1/4 cup Cilantro (Substitute with parsley if you’re not a fan)
  • 1/2 cup Jalapeño Slices (Optional spicy addition)
  • 1 tablespoon Olive Oil (Any cooking oil can work)

Method

Preparation
  1. In a saucepan, melt butter over low heat. Add cream cheese and heavy whipping cream, stirring until smooth and creamy. Mix in the shredded cheddar and remove from heat.
  2. In another skillet, brown the ground beef. Add taco seasoning as it cooks, following package directions. Ensure it’s well combined.
  3. In a separate pan, lightly brush olive oil and heat the low-carb tortillas until they are pliable and slightly crispy.
  4. Start with a tortilla, add a layer of beef, cheese sauce, sour cream, lettuce, tomato, and any additional toppings you prefer. Fold the edges over to create a circular wrap.
  5. Place the assembled wrap seam-side down on a skillet. Cook until golden and crispy on both sides.
  6. Slice in half and serve warm with additional toppings or sauce on the side.

Notes

Store leftover crunchwraps in an airtight container in the fridge for up to 3 days. To reheat, use a skillet over medium heat for about 3-5 minutes on each side to restore their crunchy texture. You can also use the oven at 350°F (177°C) for a few minutes.
