  • 1 pound Italian sausage
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 8 ounces lasagna noodles, broken into pieces
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • to taste Fresh basil, for garnish (optional)

Method
 

Preparation
  1. Heat a large pot over medium heat. Add the Italian sausage, chopped onion, and minced garlic. Stir frequently until the sausage is browned and the onion is tender.
  2. Pour in the crushed tomatoes, chicken or vegetable broth, and Italian seasoning. Bring the mixture to a boil.
  3. Add the broken lasagna noodles to the pot. Reduce the heat and allow it to simmer for about 10-12 minutes, or until the noodles are cooked to your liking.
  4. Once your noodles are tender, season the soup with salt and pepper as needed.
  5. Serve hot, dolloped with ricotta cheese and topped with shredded mozzarella. Add fresh basil for a pop of color and flavor, if you wish.

Notes

For a lighter option, substitute Italian sausage with ground turkey or plant-based alternatives. Store leftovers in an airtight container in the refrigerator for up to four days, or freeze for up to three months.
