Preparation
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts generously with salt and pepper.
- In a shallow dish, combine Parmesan cheese and half of the minced garlic. Dredge the chicken breasts in the mixture until well-coated.
Cooking
- Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook until they’re golden brown, about 4-5 minutes per side.
- While the chicken cooks, melt the butter in another saucepan over low heat. Add the remaining garlic and cook until fragrant, about a minute.
- Stir in the lemon juice and keep warm.
- Pour the lemon-garlic sauce over the chicken in the skillet.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes until the chicken reaches an internal temperature of 165°F (75°C).
Serving
- Once done, garnish with fresh parsley and serve hot.
Notes
Best served with fluffy rice or creamy mashed potatoes. Fresh steamed vegetables are a great addition. Let leftovers cool, then store in an airtight container in the fridge for 3-4 days, or freeze for 2-3 months.
