  • 1 cup orzo pasta Substitute with rice if desired.
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth Homemade broth enhances flavor.
  • 1 medium lemon, juice Adjust based on taste.
  • Salt and pepper to taste
  • Fresh parsley for garnish Optional.

Preparation
  1. Heat a drizzle of oil in a large pot over medium heat.
  2. Add the diced onion, carrots, and celery. Sauté until softened, about 5–7 minutes.
  3. Stir in the minced garlic and let it cook for another minute until fragrant.
Cooking
  1. Place the chicken breast into the pot, then pour in the chicken broth. Bring this mixture to a boil.
  2. Once boiling, reduce the heat and let it simmer for about 15 minutes, until the chicken is fully cooked.
  3. Remove the chicken, shred it using two forks, and return it to the pot.
  4. Stir in the orzo and cook according to package instructions until al dente.
  5. Add the lemon juice and season with salt and pepper to taste.
  6. Serve hot, garnished with freshly chopped parsley.

Notes

If you have leftovers, store in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. Thaw in the refrigerator overnight before reheating. This soup is great for meal prep; just add lemon juice before serving.
