- Start by dicing the chicken, mincing the garlic, and chopping the cucumber and tomatoes. Don’t forget to get fresh herbs ready!
- In a bowl, mix olive oil, garlic, tomato paste, honey, chili flakes, lemon juice, salt, and pepper. Add the chicken, ensuring it’s well-coated. Let it marinate for 20–30 minutes (or up to 2 hours for deeper flavor).
Grilling
- Preheat your grill to medium-high heat. If grilling whole breasts, cook for 5–7 minutes per side until they reach 165°F internally. For diced chicken, you can use a grill basket for 10–12 minutes or thread it onto skewers and grill for 3–4 minutes per side.
Cucumber Salad
- In a bowl, mix the cucumber, tomatoes (or bell pepper), lemon juice, olive oil, and salt, tossing gently.
Assembly
- Spread the hummus in your bowl, drizzle with olive oil, and sprinkle smoked paprika or chili powder on top.
- Layer the grilled lemon-chili chicken over the hummus, top with the fresh cucumber salad, and finish with chopped parsley.
