Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg, fresh lemon juice, and lemon zest until fully combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually, add the dry ingredients to the wet mixture, stirring until just blended.
- Chill the dough in the refrigerator for about 30 minutes to help the cookies hold their shape.
- Scoop tablespoon-sized amounts of dough and roll them into balls. Roll each ball in powdered sugar to coat thoroughly.
- Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are set but the centers remain soft.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
These cookies can be stored in an airtight container for up to a week or frozen for up to three months. For a different spin, try mixing in white chocolate chips or using lime instead of lemon.
