Ingredients
  

Crust
  • 1 cup all-purpose flour Can substitute with almond flour for a gluten-free option.
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened Make sure butter is at room temperature for best texture.
Lemon Filling
  • 1 large egg
  • 1/2 cup lemon juice Freshly squeezed is best.
  • 1 teaspoon lemon zest Adds depth of flavor.
  • 1/4 teaspoon baking powder
Topping
  • Powdered sugar for dusting Enhances presentation and adds sweetness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish.
  2. In a mixing bowl, combine the flour, sugar, and salt. Cut in the softened butter until the mixture resembles coarse crumbs.
  3. Press half of this crumb mixture firmly into the bottom of the prepared baking dish to form a crust.
  4. In a separate bowl, whisk together the egg, lemon juice, lemon zest, and baking powder until smooth. Pour this lemon mixture over the crust.
  5. Sprinkle the remaining crumb mixture on top of the lemon layer.
Baking
  1. Bake in the preheated oven for 20-25 minutes or until the top turns golden.
  2. Allow to cool before dusting with powdered sugar. Cut into squares for serving.

Notes

These bars are excellent on their own but can be paired with vanilla ice cream or whipped cream. For variations, consider adding poppy seeds or different fruit purees to the filling.
