  • 1/2 cup sour cream Greek yogurt can be used as a substitute.
  • 4 slices crispy bacon, crumbled Smoked bacon can add a smoky flavor.

Method
 

Preparation
  1. In a large pot, sauté the onions and garlic until translucent.
  2. Add the diced potatoes and broth. Bring to a boil and then simmer until the potatoes are tender.
  3. Use a potato masher to blend some of the potatoes for a creamy texture.
  4. Stir in the heavy cream, cheddar cheese, and sour cream.
  5. Season with salt and pepper to taste.
Serving
  1. Serve hot in bowls, topped with crumbled bacon and chives.

Notes

This soup is great for gatherings and can be stored in an airtight container for up to 3 days in the refrigerator. For longer storage, freeze for up to 3 months, allowing to cool completely first. Customize it with additional vegetables or spices for variation.
