Ingredients
  

For the tart crust
  • 1.5 cups all-purpose flour You can substitute with a gluten-free blend.
  • 0.5 cups unsalted butter, chilled and diced
  • 0.25 cups sugar
  • 0.25 tsp salt
  • 1 large egg yolk
For the mango curd filling
  • 3 ripe mangoes, pureed Use ripe mangoes for best flavor.
  • 0.5 cups sugar For the curd.
  • 2 large eggs
  • 0.25 cups lemon juice Freshly squeezed for best taste.
  • 0.5 cups butter, melted
For serving
  • Whipped cream or fresh fruit For topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, sugar, and salt. Cut in the chilled butter until the mixture resembles coarse crumbs.
  3. Stir in the egg yolk until the dough begins to come together.
  4. Press the dough evenly into a tart pan. Bake for 15-20 minutes, or until it turns golden brown.
Making the Mango Curd
  1. In a saucepan over medium heat, whisk together the mango puree, 1/2 cup sugar, eggs, and lemon juice.
  2. Cook this mixture while stirring constantly until it thickens.
  3. Remove from heat and stir in the melted butter until fully combined.
Assembly
  1. Pour the mango curd into the cooled tart shell and let it cool to room temperature.
  2. Before serving, top with whipped cream or fresh fruit for an extra pop of flavor.

Notes

Store leftovers covered in the refrigerator for up to 3 days. To freeze, consider sealing individual slices in a container.
