Preparation
- Boil pasta in salted water until al dente. Drain and set aside, reserving ½ cup of pasta water.
- If using chicken, heat olive oil in a large skillet over medium-high heat and sear the chicken until golden brown on all sides and fully cooked. Remove and set aside.
Sauce Preparation
- In the same skillet, sauté garlic until fragrant.
- Add sun-dried tomatoes and cook for 2–3 minutes.
- Pour in chicken broth, heavy cream, and Parmesan cheese. Stir to combine.
- Add oregano, red pepper flakes, salt, and pepper. Let the sauce simmer for 5–7 minutes until it thickens.
Combine
- Return the cooked chicken to the skillet (if using), and add the pasta. Toss to coat in the sauce.
- If the sauce is too thick, add a splash of reserved pasta water for the desired consistency.
Serve
- Top with fresh herbs and extra Parmesan cheese. Serve hot and enjoy!
Notes
Use quality ingredients and adjust to taste. For a vegetarian version, omit the chicken and add vegetables like mushrooms or spinach.
