  • 2 pieces chicken breasts Can use leftover cooked chicken as a substitute.
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 pieces onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth Ensure it's gluten-free if necessary.
  • 1 cup heavy cream Can be swapped with half-and-half or coconut cream.
  • 1 cup spinach, chopped
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • for sautéing tablespoon Olive oil Used to sauté vegetables.

Method
 

Preparation
  1. In a large pot, heat 1 tablespoon of olive oil over medium heat.
  2. Add chopped onion, diced carrots, and diced celery. Sauté until they’re softened, about 5 minutes.
  3. Stir in minced garlic and Italian seasoning, cooking for another minute until fragrant.
  4. Add the chicken breasts to the pot and pour in 4 cups of chicken broth. Bring to a boil, then reduce heat to simmer for 20 minutes until the chicken is cooked through.
  5. Remove chicken breasts from the pot, shred them with two forks, and return it to the soup.
  6. Stir in 1 cup of heavy cream and 1 cup of chopped spinach. Let cook for another 5 minutes until heated through.
  7. Adjust the flavor with salt and pepper to taste, then serve hot.

Notes

Garnish with fresh parsley or Parmesan cheese for added flavor. Serve with crusty bread or salad for a complete meal. Ensure to store leftovers properly to maintain quality.
