Ingredients
  

For the Sandwich Filling
  • 2 whole eggs
  • 1/4 cup feta cheese, crumbled Can substitute with goat cheese or ricotta.
  • 1 medium tomato, diced
  • 1 cup fresh spinach
  • 2 slices whole grain bread Can be swapped for sourdough or ciabatta.
  • to taste olive oil For cooking.
  • to taste salt and pepper For seasoning.

Method
 

Preparation
  1. Drizzle a little olive oil into a skillet over medium heat.
  2. In a bowl, whisk the eggs with a pinch of salt and pepper.
  3. Pour the eggs into the heated skillet and stir gently until just set, about 2 minutes.
  4. Add the spinach, diced tomatoes, and crumbled feta, cooking for another minute until the spinach wilts.
  5. Toast the slices of whole grain bread to your preferred crispiness.
  6. Spoon the egg mixture onto one slice of toasted bread, topping it with the other slice. Cut in half and serve immediately.

Notes

For added flavor, consider serving with fresh herbs, hot sauce, or Greek yogurt. Leftover filling can be stored in an airtight container in the fridge for up to two days.
