Ingredients
  

Quesadilla Filling
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese Pre-shredded cheese can be used for convenience.
  • 1/2 cup crumbled feta cheese
  • 1 small tomato, diced
  • 1/4 cup red onion, thinly sliced
  • 1 tablespoon olive oil For cooking on the skillet.
  • Black pepper, to taste
Tortillas
  • 4 pieces flour tortillas Whole wheat tortillas can be used for a healthier option.

Method
 

Preparation
  1. In a mixing bowl, combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, sliced red onion, and black pepper. Stir until well mixed.
  2. Lay one tortilla flat on a clean surface. Add one-fourth of the filling mixture to one half of the tortilla and fold it over to encase the filling.
Cooking
  1. Heat a non-stick skillet over medium heat and drizzle in the olive oil.
  2. Carefully place the filled tortilla in the skillet and cook for about 3-4 minutes, or until golden brown.
  3. Flip the quesadilla gently and cook the other side for another 3-4 minutes until crispy.
  4. Remove from the heat, slice into wedges, and serve warm.

Notes

Serve with a side salad tossed with vinaigrette or a dollop of Greek yogurt or tzatziki for dipping. Leftovers can be stored in an airtight container in the fridge for up to three days. Reheat in a skillet until crispy again.
