Ingredients
  

For the Quesadillas
  • 4 pieces flour tortillas Can be substituted with whole wheat or corn tortillas.
  • 1 cup fresh spinach Chopped.
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato Diced.
  • 1/4 cup red onion Thinly sliced.
  • 1 tablespoon olive oil
  • Black pepper To taste.

Method
 

Preparation
  1. In a mixing bowl, combine the mozzarella cheese, feta cheese, spinach, diced tomato, thinly sliced red onion, and a sprinkle of black pepper. Mix well to evenly combine all ingredients.
  2. Lay one tortilla flat on a clean surface and place one-fourth of the filling mixture on one half of the tortilla. Fold the tortilla over to cover the filling.
Cooking
  1. Heat a non-stick skillet over medium heat and add the olive oil.
  2. Place the filled tortilla in the skillet and cook for about 3-4 minutes, until golden brown.
  3. Carefully flip the quesadilla and cook for another 3-4 minutes until both sides are crispy and golden.
  4. Remove from heat, slice into wedges, and serve while warm.

Notes

Pair with a side salad or tzatziki for a complete meal. Use a sharp knife or pizza cutter for clean cuts when serving.
