Ingredients
  

For the Steak Marinade
  • 1 lb sirloin steak (about 1-inch thick)
  • 3 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tbsp lemon juice (fresh)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
For the Bowl
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional for paleo or keto)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber diced
  • ½ red onion thinly sliced
  • ½ cup kalamata olives (pitted)
  • ⅓ cup feta cheese (crumbled; optional for dairy-free)
  • ¼ cup fresh herbs (parsley or dill, chopped)
For the Tzatziki Sauce
  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
  • ½ cucumber grated, squeezed dry
  • 1 tbsp lemon juice (fresh)
  • 1 clove garlic (minced)
  • 1 tbsp fresh dill (chopped)
  • to taste Salt & pepper
For the Vinaigrette
  • 3 tbsp olive oil
  • 2 tbsp lemon juice (fresh)
  • 1 tsp honey (omit for Whole30)
  • 1 clove garlic (minced)
  • ½ tsp dried oregano
  • to taste Salt & pepper

Method
 

Marinate the Steak
  1. In a bowl, mix together the olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper.
  2. Coat the steak with the marinade and let it sit for 30 minutes to 4 hours.
Prepare the Tzatziki
  1. In another bowl, combine Greek yogurt, grated cucumber (squeezed dry), lemon juice, minced garlic, fresh dill, and season with salt and pepper.
  2. Chill in the fridge until ready to serve.
Make the Vinaigrette
  1. Whisk together olive oil, lemon juice, honey, minced garlic, dried oregano, salt, and pepper in a small bowl.
Cook the Steak
  1. Heat a skillet over medium-high heat.
  2. Sear the marinated steak for 4–5 minutes on each side for medium rare.
  3. Remove from heat and let it rest for a few minutes before slicing thinly.
Assemble the Bowl
  1. Layer your choice of cooked grains in a bowl.
  2. Add the sliced steak and top with cherry tomatoes, cucumber, red onion, olives, feta cheese, and fresh herbs.
  3. Drizzle with tzatziki and vinaigrette over the top.

Notes

Feel free to customize with your favorite grains or toppings. Pair with warm pita bread or a side of roasted vegetables. A chilled white wine elevates this meal.
