- Season the chicken breasts with chili powder, garlic powder, onion powder, crushed red pepper flakes, dried oregano, paprika, cumin, salt, and pepper. Let it sit for a few minutes to deepen the flavors.
Cooking
- Heat a skillet over medium-high heat with a small amount of oil. Sear the chicken breasts until golden brown on both sides, about 4-5 minutes per side. Let them rest afterward.
- In a separate saucepan, melt the butter over medium heat. Gradually whisk in the flour to form a smooth paste. Cook until the roux is light golden brown.
- Slowly whisk in the milk, stirring continuously to avoid lumps. Adding salt, cayenne pepper, and paprika as it thickens.
- Remove from heat and stir in the shredded cheddar cheese until melted and smooth.
