  • 10-12 pieces flour or corn tortillas Flour for pliability; corn for gluten-free option.
  • 1 lb ground beef, turkey, or shredded chicken Cooked with taco seasoning.
  • 1 packet taco seasoning For seasoning the meat.
  • 1 cup enchilada sauce or salsa For layering.
  • 1.5 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend) Use a mix for flavor.
  • 1 cup black beans Optional, for added protein.
  • 1 cup corn kernels Optional, for sweetness.
Toppings
  • 1/2 cup sour cream For serving.
  • 1 cup guacamole or sliced avocado For serving.
  • 1/2 cup chopped cilantro For garnish.
  • 1/2 cup diced tomatoes or additional salsa For garnish.

Method
 

Preparation
  1. Gather all your ingredients.
  2. Preheat the oven to 375°F (190°C).
  3. Lightly grease a 9x13-inch baking dish.
Cook the Filling
  1. In a skillet over medium heat, cook the ground meat until browned.
  2. Stir in the taco seasoning and ½ cup water, and simmer for 3-5 minutes.
  3. Add black beans and corn if desired, stirring to combine.
Assemble the Lasagna
  1. Spread a thin layer of enchilada sauce on the bottom of the baking dish.
  2. Layer 2-3 tortillas on top, overlapping slightly.
  3. Add a layer of meat mixture, followed by shredded cheese and enchilada sauce.
  4. Repeat layers until all ingredients are used, finishing with tortillas, sauce, and cheese on top.
Bake the Lasagna
  1. Cover the dish with foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
Rest and Serve
  1. Allow the lasagna to rest for 10 minutes before slicing.
  2. Serve with your choice of toppings.
