Ingredients
  

For the filling
  • 8 ounces mushrooms, chopped
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 cup spinach, chopped Can substitute with kale
  • 1 cup cream cheese, softened Can substitute with goat cheese for a tangy twist.
  • 1 cup shredded mozzarella cheese Divided for stuffing and topping.
  • Salt and pepper to taste
  • Olive oil For sautéing
  • Fresh herbs (optional)
For the chicken
  • 4 chicken breasts Make sure to create pockets for stuffing.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté the onions and garlic until they become translucent.
  3. Add the chopped mushrooms and spinach to the skillet. Cook until the mushrooms are soft. Remove from heat and stir in the cream cheese and half of the mozzarella cheese.
  4. Take each chicken breast and carefully create a pocket in the thickest part. Season them generously with salt and pepper, then stuff with the mushroom mixture.
Cooking
  1. Place the stuffed chicken breasts in a baking dish. Sprinkle the remaining mozzarella on top and add fresh herbs if you like.
  2. Bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked and the cheese is bubbly.
  3. Serve hot and enjoy every bite!

Notes

This dish pairs well with garlic mashed potatoes, fresh salad, or roasted seasonal vegetables. Leftovers can be stored in an airtight container in the fridge for up to 3 days, or frozen for longer storage.
