Ingredients
  

Base ingredients
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 pieces carrots, diced
  • 2 stalks celery, sliced
  • 1 cup butternut squash, cubed Can substitute with sweet potatoes or other firm winter vegetables.
  • 1 can (15 oz) cannellini beans, drained
  • 4 cups vegetable broth Ensure it is gluten-free if necessary.
Seasoning
  • 1 teaspoon thyme Fresh herbs can be substituted for dried.
  • 1 teaspoon sage
  • 1/2 teaspoon cinnamon
  • to taste Salt and black pepper
Optional garnishes
  • to taste Fresh parsley
  • to taste Coconut milk
  • to taste Chili flakes

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Once hot, add the chopped onion, sautéing until it’s translucent.
  3. Stir in the minced garlic and cook for another minute until it’s fragrant.
  4. Next, add the diced carrots, sliced celery, and cubed butternut squash. Sauté for about 5-7 minutes, stirring occasionally until they are slightly tender.
Cooking
  1. Pour in the vegetable broth, followed by thyme, sage, cinnamon, salt, and black pepper. Bring it all to a boil.
  2. Reduce the heat and allow the soup to simmer uncovered for 20-25 minutes; this lets the flavors meld beautifully and softens the vegetables completely.
  3. Add the drained cannellini beans during the last 5 minutes of cooking. If you want a creamier texture, blend a portion of the soup with an immersion blender before stirring it back into the pot.
  4. Serve hot, garnished with freshly chopped parsley, a drizzle of coconut milk, or a sprinkle of chili flakes.

Notes

For an even richer flavor, try roasting the butternut squash before adding it to the soup. Add a pinch of cayenne pepper or smoked paprika for extra spice. For added nutrition, toss in spinach or kale in the last few minutes of cooking.
