Preparation
- In a bowl, combine chicken thighs with paprika, garlic powder, oregano, coriander, cayenne (if using), brown sugar, and salt. Let it marinate for at least 30 minutes (or overnight for deeper flavor).
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant. Toss in the diced onion and sauté until golden.
Cooking
- Add the marinated chicken to the pot. Sauté until browned on all sides.
- Stir in diced red capsicum, basmati rice, turmeric, and chili flakes (if using). Mix well to coat the rice in oil.
- Pour in the chicken stock and bring to a boil. Lower the heat and simmer, covered, for about 15-20 minutes, or until the rice is cooked and has absorbed the liquid.
- Stir in frozen peas (if using) and let sit for a few minutes before serving.
Serving
- Garnish with chopped green onions and drizzle with Perinaise or your favorite hot sauce.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, use the microwave or stovetop, adding a splash of chicken stock to retain moisture. Consider marinating the chicken overnight for extra flavor.
