For the Stew
  • 300 g thinly sliced beef or pork
  • 3 medium potatoes, peeled and cut into large chunks
  • 1 medium onion, sliced
  • 1 large carrot, peeled and cut into chunks
  • 2 cups dashi broth (or substitute with chicken or vegetable stock) For a vegetarian option, use vegetable stock.
For the Seasoning
  • 3 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon sugar
  • 1 tablespoon sake
Optional Additions
  • to taste green beans or snow peas for garnish
  • to taste konnyaku noodles for added texture

Method
 

Preparation
  1. Peel and cut the potatoes and carrots into chunks.
  2. Slice the onion and trim any fat from the beef or pork slices.
Cooking
  1. Heat 1 tablespoon of oil in a large pot over medium heat.
  2. Add the onions and sauté until slightly translucent.
  3. Add the beef or pork and cook until lightly browned.
  4. Add the potatoes and carrots to the pot.
  5. Pour in the dashi broth, ensuring all the ingredients are submerged.
  6. Bring the mixture to a gentle boil, then skim off any foam or impurities that rise to the surface.
  7. Add soy sauce, mirin, sugar, and sake to the pot.
  8. Stir gently to distribute the seasonings evenly.
  9. Reduce the heat to low and cover the pot with a lid.
  10. Simmer for 20–30 minutes, or until the potatoes and carrots are tender and the broth has slightly reduced.
Finishing Touches
  1. Taste the stew and adjust the seasoning with additional soy sauce or sugar if needed.
  2. Garnish with green beans or snow peas for color and texture.

Notes

Japanese stews taste even better the next day as the flavors meld. Prepare it in advance for a richer flavor. Serve with steamed rice and pickled vegetables for a complete meal.
