Ingredients
  

  • ¼ cup fresh pumpkin puree
  • 3 tbsp all-purpose flour or oat flour for gluten-free
  • 2 tbsp brown sugar or coconut sugar
  • ¼ tsp baking soda
  • ¼ tsp pumpkin spice or cinnamon + nutmeg
  • 1 tbsp unsweetened applesauce egg substitute
  • 2 tbsp milk dairy or plant-based
  • ½ tsp vanilla extract
  • 1 tsp melted butter or coconut oil
  • Pinch of salt

Method
 

  1. In a microwave-safe mug, whisk together flour, sugar, baking soda, salt, and pumpkin spice.
  2. Stir in the pumpkin puree, applesauce, milk, vanilla, and melted butter until smooth.
  3. Microwave on high for 60-90 seconds (check doneness with a toothpick).
  4. Let cool for 1-2 minutes before eating.
  5. Optional: Top with whipped cream, chocolate chips, or caramel drizzle.

Notes

  • For a sweeter version, add ½ tbsp more brown sugar or maple syrup.
  • For a moister texture, reduce flour by ½ tbsp and add 1 tbsp extra pumpkin puree.
  • Use almond or oat flour for a gluten-free option.
