Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice Can substitute with jasmine or basmati rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce Use your favorite type
  • ¼ cup honey
  • 1 cup mixed vegetables Frozen or fresh, such as bell peppers, peas, and carrots
Spices
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • to taste salt and pepper

Method
 

Cooking
  1. Heat a large skillet over medium heat. Season the chicken with salt, pepper, garlic powder, onion powder, and smoked paprika.
  2. Sear the chicken for about 5 minutes on each side until it's golden brown.
  3. In a small bowl, whisk together the BBQ sauce and honey. Pour this mix over the browned chicken.
  4. Add the rice and chicken broth to the skillet, stirring to combine everything well.
  5. Bring the mixture to a gentle simmer. Cover the skillet and reduce the heat to low. Cook for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.
  6. During the last 5 minutes of cooking, add the mixed vegetables on top to steam perfectly.
  7. Let the dish sit for 5 minutes off the heat before fluffing the rice with a fork and serving.

Notes

Feel free to experiment with different types of BBQ sauce and proteins such as shrimp or tofu. This dish also freezes well and can be reheated easily.
