  • 1 pack 13 oz pack of Cajun andouille sausage, cut into coins
  • 1 tbsp chopped garlic
  • 1 can 14.5 oz can chicken broth (about 2 cups)
  • 0.5 cup heavy cream
  • 1 can 10 oz can Rotel diced tomatoes and chilies
  • 8 oz dry bowtie pasta (½ pound or approximately 2 cups)
  • 2 cups shredded cheddar cheese
  • 1 tsp Cajun seasoning See notes for variations

Method
 

Preparation
  1. In a large skillet (make sure it has a lid for later), cook the sausage over medium heat for about 5 minutes, or until it reaches your desired browning.
  2. Once done, remove the sausage from the pan and set it aside on a paper towel-lined plate, preserving the sausage grease in the skillet.
  3. In the same skillet, sauté the garlic for about a minute in the leftover sausage grease.
  4. Add the chicken broth, diced tomatoes, heavy cream, and Cajun seasoning, stirring well to combine.
  5. Stir in the dry pasta, cover with a lid, and let it simmer over low heat for about 14 minutes.
  6. Once the pasta is cooked to your liking, toss in the cooked sausage along with the shredded cheddar cheese.

Notes

For serving, consider garnishing with chopped green onions or additional Cajun seasoning. Pair with a simple side salad or some crusty bread. Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat on the stove over medium-low heat, adding a splash of chicken broth or cream if needed. Freeze individual portions for up to three months.
