  • 1 pound smoked sausage Sliced
  • 12 ounces penne pasta Uncooked
  • 2 cups chicken broth
  • 1 cup heavy cream Can be substituted with half-and-half for a lighter version
  • 1 medium onion Chopped
  • 1 bell pepper bell pepper Chopped
  • 3 cloves garlic Minced
  • 1 can diced tomatoes
  • 1 tablespoon Cajun seasoning Adjust according to spice preference
  • 1 teaspoon paprika
  • to taste salt and pepper
  • 1 cup grated Parmesan cheese For blending into the dish
  • 2 tablespoons olive oil

Method

  1. In a large pot, heat the olive oil over medium heat.
  2. Slice the sausage, chop the onion and bell pepper, and add them to the pot. Sauté until they are browned, about 5-7 minutes.
  3. Mince the garlic and stir it into the pot, cooking for one more minute.
  4. Pour in the diced tomatoes, chicken broth, heavy cream, Cajun seasoning, paprika, salt, and pepper. Bring to a boil.
  5. Once boiling, stir in the uncooked penne pasta. Lower the heat and let it simmer for about 10-12 minutes, stirring occasionally until the pasta is tender.
  6. Remove the pot from heat and mix in the grated Parmesan cheese until it is melted and creamy.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave, adding a splash of broth if needed. Customize the recipe by using different types of sausage or adding vegetables like spinach or zucchini.
