  • 1 cup long-grain rice
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth Using broth instead of water enhances flavor.
  • 1 tablespoon Cajun seasoning Adjust based on spice preference.
  • Salt and pepper to taste
  • Green onions, for garnish Chopped for garnishing before serving.

Preparation
  1. In a large pot, brown the sausage over medium heat until fully cooked.
  2. Add the diced onion, bell pepper, and garlic; cook until softened.
  3. Stir in the rice, followed by chicken broth, Cajun seasoning, salt, and pepper.
  4. Bring everything to a boil, then reduce the heat to low and cover.
  5. Allow it to simmer for 18-20 minutes, or until the rice is cooked through.
  6. Fluff with a fork, garnish with chopped green onions, and serve warm.

Notes

Leftover dirty rice can be stored in an airtight container in the fridge for up to three days. Add a splash of chicken broth when reheating. For larger batches, freezer storage is acceptable for up to three months.
