One Pot Kielbasa Pasta

Main Ingredients
  • 12 oz penne or rotini pasta Feel free to swap out the pasta shape based on preference.
  • 1 tbsp olive oil
  • 14 oz kielbasa sausage, sliced
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 2 cups chicken broth (low sodium)
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1 1/2 cups shredded cheddar or mozzarella cheese
  • to taste Salt and pepper
  • 1/2 tsp smoked paprika (optional)
  • Fresh parsley (for garnish) For garnishing
Optional Add-ins

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the sliced kielbasa and cook for about 4–5 minutes until it’s nicely browned.
  3. Throw in the minced garlic and chopped onion, sautéing for 2 minutes until fragrant and translucent.
  4. Pour in the chicken broth and heavy cream, stirring to combine, and bring to a light simmer.
  5. Add the pasta to the pot, stir well, then cover and simmer for 10–12 minutes, stirring occasionally, until the pasta is al dente.
  6. Once the pasta is cooked, stir in the grated Parmesan cheese until it melts and the sauce is creamy.
  7. Add in the cheddar or mozzarella cheese and mix until melted.
  8. Season your delicious pasta with salt, pepper, and smoked paprika, if using.
  9. Garnish with freshly chopped parsley and serve hot, optionally topping with more grated Parmesan.

Notes

To store, cool completely and transfer to an airtight container. It lasts up to 3 days in the fridge, or can be frozen, although texture may change upon reheating. Reheat with a splash of milk or broth.
