Main Ingredients
  • 1 lb ground beef or Italian sausage Substitutes like turkey or plant-based meat can be used.
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 8 oz lasagna noodles, broken into pieces Break into smaller pieces for ideal cooking.
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp dried Italian herbs
  • Salt and pepper to taste

Method
 

Cooking
  1. Heat a large pot over medium-high heat.
  2. Add the ground beef or Italian sausage, breaking it apart as it cooks.
  3. Once browned and no longer pink, drain excess fat.
  4. Stir in the finely chopped onion and sauté until translucent, about 5 minutes.
  5. Add minced garlic and sauté for about 1 minute until fragrant.
  6. Pour in the crushed tomatoes and broth, stirring to combine.
  7. Incorporate the broken lasagna noodles, ensuring they’re submerged.
  8. Sprinkle in dried Italian herbs, salt, and pepper.
  9. Bring to a boil, then reduce heat and cover to simmer for 15-20 minutes.
  10. Stir in ricotta cheese until melted and creamy.
  11. Fold in shredded mozzarella cheese until it’s bubbly and melted.
  12. Taste and adjust seasoning, adding lemon juice if desired.

Notes

Serve topped with fresh basil or parsley. Pairs well with garlic bread or a green salad. Can be made ahead and stored for later meals.
