Ingredients
  

Base Ingredients
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 pound ground beef or Italian sausage Substitute with turkey or plant-based meat if desired.
Liquids and Seasonings
  • 28 ounces crushed tomatoes
  • 4 cups vegetable or chicken broth
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes Optional
Pasta and Cheese
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
Seasoning and Garnish
  • to taste Salt and pepper
  • Fresh basil leaves (optional, for garnish)

Method
 

Cooking
  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the diced onion and sauté for about 3-4 minutes until soft.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the ground beef or Italian sausage to the pot. Brown the meat, breaking it up with a spoon, for about 5-7 minutes. Drain excess fat if necessary.
  5. Stir in the crushed tomatoes, broth, dried basil, oregano, and red pepper flakes if using. Bring this mixture to a boil.
  6. Once boiling, add the broken lasagna noodles and reduce the heat to a simmer. Cook for about 10-12 minutes, stirring occasionally, until the noodles are tender.
  7. Season with salt and pepper to taste.
  8. Remove the pot from heat and stir in the ricotta cheese until well combined.
  9. Ladle the soup into bowls and top with shredded mozzarella and grated Parmesan.
  10. Garnish with fresh basil leaves if desired. Serve immediately.

Notes

For a complete meal, serve with garlic bread or a salad. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
