One Pot Shawarma Chicken and Rice

Ingredients
  

For the Chicken Marinade
  • 1.5 pounds boneless, skinless chicken thighs Can be substituted with chicken breasts.
  • 2 tablespoons olive oil For browning the chicken.
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • to taste Salt and black pepper
For the Rice and Other Ingredients
  • 2 cups basmati rice Rinsed and drained.
  • 3.5 cups chicken broth Can be substituted with vegetable broth for a vegetarian version.
  • 1 cup canned chickpeas Drained and rinsed.
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped For garnishing.
  • 1 tablespoon lemon juice For flavor enhancement.
  • optional lemon wedges and plain yogurt For garnish.

Method
 

Preparation
  1. Marinate the chicken thighs with the spice mix of cumin, coriander, smoked paprika, turmeric, cinnamon, salt, and pepper. Let it sit for at least 30 minutes, or refrigerate for up to 2 hours for optimal flavor.
Cooking
  1. In a large pot or Dutch oven, heat olive oil over medium-high heat and brown the marinated chicken thighs for about 4-5 minutes on each side. Remove the chicken and set aside.
  2. In the same pot, sauté the chopped onion and minced garlic until the onion is translucent, about 3-4 minutes.
  3. Stir in the rinsed basmati rice, ensuring it is well-coated with the onion and spice mixture. Toast the rice for 1-2 minutes.
  4. Pour chicken broth into the pot, bringing it to a boil. Mix in the chickpeas, then lay the browned chicken thighs on top of the rice.
  5. Reduce heat to low, cover with a tight-fitting lid, and let simmer for about 20 minutes or until the rice is tender and the chicken is fully cooked.
  6. Remove the pot from heat and allow it to sit, covered, for an additional 5 minutes.
  7. Finish by sprinkling fresh chopped parsley and drizzling lemon juice over the dish. Serve with optional lemon wedges and yogurt.

Notes

You can elevate the dish by serving with mixed greens or cucumber salad. Overnight marinating will enhance flavor depth.
