One Skillet Salmon with Lemon Orzo

Ingredients
  

For the Salmon
  • 4 pieces skinless salmon fillets
  • 1 tsp salt divided
  • 1 tsp coarsely ground black pepper divided
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 1 tsp unsalted butter
For the Orzo and Vegetables
  • 1 yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup dry orzo pasta
  • 1 tsp dried thyme
  • 3 cups low-sodium chicken broth
  • 5 ounces baby spinach or substitute with kale
  • 1/2 lemon Juice from
  • 1/2 cup grated Parmesan
For Serving
  • Freshly ground black pepper for serving
  • Chili flakes for serving

Method
 

Preparation
  1. Begin by grating the Parmesan, finely chopping the onion, and mincing the garlic cloves. Pat the salmon fillets dry with a paper towel.
  2. Sprinkle both sides of the salmon fillets with garlic powder, sweet paprika, and ½ teaspoon each of salt and pepper.
Cooking
  1. In a large nonstick skillet, heat the olive oil and butter over medium-high heat. Add the salmon fillets to the skillet and sear for about 3-4 minutes per side until golden. Remove and set aside.
  2. Lower the heat to medium. Add the chopped onion and minced garlic to the skillet, cooking until they are soft and fragrant, around 2 minutes. Stir in the thyme and remaining salt and pepper.
  3. Add the orzo to the pan and toast for about 1 minute, letting it absorb the flavors.
  4. Pour in the chicken broth and bring it to a boil. Reduce the heat to medium-low, cooking uncovered while stirring occasionally until the orzo is almost al dente and most of the liquid is absorbed (about 8 minutes).
  5. Toss in the baby spinach, stirring until it wilts for about 2 minutes. Stir in the lemon juice and Parmesan. If the mixture is too thick, add more broth as needed and adjust your seasonings.
  6. Return the seared salmon to the skillet and let it simmer for 2-3 minutes or until heated through.
Serving
  1. Top with freshly ground black pepper and chili flakes for a touch of heat. Enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove with a splash of chicken broth to retain moisture.
