  • 6 large potatoes, peeled and diced
  • 1/2 cup chopped onion
  • 1/4 cup butter
  • 4 cups chicken broth Vegetable broth can be used for a vegetarian version
  • 1 cup heavy cream Can substitute with low-fat milk for a healthier version
  • 1 cup shredded cheddar cheese Other cheeses like Gruyere or Monterey Jack can be used for a unique flavor
  • 1/2 cup cooked and crumbled bacon Optional for a lighter version
  • Salt and pepper to taste
  • Chopped green onions for garnish

Method
 

Preparation
  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and sauté until soft.
  3. Stir in the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, which will take about 15-20 minutes.
  4. Use a potato masher to mash some of the potatoes for a thicker consistency.
  5. Stir in the heavy cream, cheddar cheese, and crumbled bacon. Cook until the cheese is melted.
  6. Season with salt and pepper to taste.
Serving
  1. Serve hot, garnished with chopped green onions.

Notes

For extra flavor, you can add a dollop of sour cream or more crumbled bacon on top. If you prefer a smoother texture, blend the soup with an immersion blender after mashing the potatoes.
