  • 2 cups rotini or farfalle pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, diced
  • 1 cup bell peppers, diced
  • ½ cup black olives, sliced
  • ¼ cup red onion, thinly sliced
  • ½ cup feta cheese or mozzarella balls (optional)
  • ⅓ cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic (minced)
  • Salt and pepper to taste
Macaroni Salad Ingredients
  • 2 cups elbow macaroni
  • ½ cup celery, diced
  • ½ cup carrots, shredded
  • ¼ cup red onion, finely diced
  • 3 hard-boiled eggs, chopped (optional)
  • ½ cup mayonnaise
  • 1 tablespoon vinegar or pickle juice
  • 1 teaspoon mustard
  • 1 teaspoon sugar
  • Salt and pepper to taste

Method
 

Making Pasta Salad
  1. Boil pasta in salted water until al dente. Drain and rinse under cold water to stop cooking.
  2. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper.
  3. In a large bowl, combine pasta, tomatoes, cucumbers, bell peppers, olives, and red onion. Toss gently to mix.
  4. Pour the dressing over the salad and toss until evenly coated.
  5. Sprinkle with feta cheese or add mozzarella balls, if desired. Serve immediately or chill for 30 minutes to enhance flavors.
Making Macaroni Salad
  1. Boil macaroni in salted water until al dente. Drain and rinse under cold water to cool.
  2. In a medium bowl, mix mayonnaise, vinegar or pickle juice, mustard, sugar, salt, and pepper until smooth.
  3. In a large bowl, mix cooled macaroni with celery, carrots, and red onion. Add eggs if desired.
  4. Pour the dressing over the mixture and stir gently until well coated.
  5. Chill in the refrigerator for at least 1 hour before serving to allow flavors to meld.
