  • 1 pound beef sirloin, sliced into strips Use tender cuts for best results.
  • 2 pieces bell peppers, sliced Any color bell peppers can be used.
  • 1 medium onion, sliced Adds sweetness to the dish.
Sauce Ingredients
  • 1 cup beef broth Use low sodium if desired.
  • 1/4 cup soy sauce Low-sodium soy sauce can be substituted.
  • 2 tablespoons cornstarch For thickening the sauce.
  • 2 tablespoons water To mix with cornstarch.
  • 1 tablespoon minced garlic Enhances flavor.
  • 1 teaspoon black pepper Adjust to taste.

Method
 

Preparation
  1. Add the sliced beef sirloin, bell peppers, and onion into the crock pot.
  2. In a separate bowl, mix the beef broth, soy sauce, minced garlic, and black pepper. Pour this mixture over the beef and vegetables in the crock pot.
Cooking
  1. Cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
  2. About 30 minutes before you're ready to serve, mix the cornstarch with water and stir it into the crock pot to thicken the sauce.
  3. Taste and season with salt before serving.

Notes

Leftovers can be stored in an airtight container for up to 4 days or frozen for up to 3 months. Remember to thaw in the fridge overnight before reheating.
