Ingredients
  

Pasta Ingredients
  • 12 oz short pasta (penne, fusilli, or farfalle) Any short pasta works well
Pesto Ingredients
  • 1 cup fresh basil leaves For the pesto
  • ⅓ cup grated Parmesan cheese
  • ⅓ cup extra virgin olive oil For the pesto
  • 2 tablespoons pine nuts Can substitute with walnuts
  • 1 clove garlic
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ piece lemon (juice) Optional for brightness
Salad Ingredients
  • 1 ½ cups cherry tomatoes, halved
  • 8 oz fresh mozzarella balls (bocconcini) or diced mozzarella
  • ¼ cup fresh basil leaves, torn For garnish

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop cooking.
Preparing the Pesto
  1. In a food processor, combine the fresh basil, Parmesan cheese, olive oil, pine nuts, garlic, salt, and black pepper. Blend until smooth. Adjust consistency with water or more olive oil if needed.
Assembling the Salad
  1. In a large bowl, toss the cooled pasta with the pesto until evenly coated.
  2. Fold in the halved cherry tomatoes and mozzarella balls gently.
Serving
  1. Sprinkle torn basil leaves over the dish. Let the salad rest for 15 minutes before serving for enhanced flavor.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Refresh with olive oil if needed.
