  • 2 tablespoons butter Use olive oil for a dairy-free option.

  • Chopped chives for garnish

Preparation
  1. In a large pot, melt butter over medium heat. Add the chopped onion and sauté until translucent.
  2. Toss in the diced potatoes along with the vegetable broth. Bring to a boil, then reduce the heat and let it simmer until the potatoes are tender, roughly 15-20 minutes.
  3. Once the potatoes are soft, you can use a potato masher or an immersion blender to reach your desired consistency.
  4. Stir in the milk, seasoning with salt and pepper to taste. Heat it through for a few minutes.
  5. Serve hot, garnished beautifully with chives for that extra flair.

Notes

For additional flavors, consider adding garlic or herbs during the sautéing process. Leftovers can be stored in an airtight container for up to three days or frozen for up to two months.
