Ingredients
  

Noodle Base
  • 8 oz wide Lo Mein noodles, cooked and rinsed
Pork and Vegetables
  • 1 pound ground pork Can substitute with chicken or plant-based protein
  • 1/4 cup sliced green onions Plus 2 tablespoons for garnish
  • 4 cups coleslaw mix
Sauce
  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons mirin Can substitute with white wine vinegar and sugar
  • 2 tablespoons dark soy sauce For a gluten-free option, use tamari
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha Add more for extra heat
Cooking Oil
  • 1 tablespoon peanut oil

Method
 

Cook the Noodles
  1. Prepare the Lo Mein noodles according to package instructions, then rinse them under cold water and set aside.
Brown the Pork
  1. In a skillet, heat the peanut oil over medium-high heat. Add the ground pork and 1/4 cup of sliced green onions, browning the meat until fully cooked.
Make the Sauce
  1. In a bowl, whisk together the chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha until well combined.
Combine Everything
  1. Add the cooked noodles, coleslaw mix, and sauce to the skillet with the browned pork. Toss everything together for 2-3 minutes until all ingredients are evenly coated.
Garnish and Serve
  1. Serve hot, garnishing with the remaining sliced green onions for a fresh touch.

Notes

Best served warm, it pairs wonderfully with steamed edamame or a light cucumber salad. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
