Ingredients
  

Dumplings and Broth
  • 1 package 12 oz pork or chicken dumplings Frozen dumplings can be used; add extra cooking time.
  • 4 cups low-sodium chicken broth Vegetable broth can be used for a vegetarian version.
Aromatics
  • 1 tbsp fresh ginger, grated Fresh ginger preferred; ground ginger can be a substitute.
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce Tamari or coconut aminos are options for gluten-free.
  • 1 tsp sesame oil Drizzle just before serving for extra flavor.
Greens and Garnish
  • 2 cups fresh spinach or bok choy Choose according to preference.
  • 2 stalks green onions, chopped For garnish.

Preparation
  1. Gather all of your ingredients to streamline the cooking process.
Cooking
  1. In a large pot over medium heat, add a splash of oil. Sauté the minced garlic and grated ginger until fragrant (about 1 minute).
  2. Pour in the chicken broth and bring to a gentle boil.
  3. Add the dumplings to the pot, cooking until they’re tender.
  4. Stir in the fresh spinach or bok choy along with soy sauce, cooking until the greens are wilted (about 2-3 minutes).
  5. Drizzle in the sesame oil just before serving for that extra burst of flavor.
  6. Ladle into bowls and top with chopped green onions.

Notes

If storing leftovers, keep in an airtight container in the fridge for up to three days. Reheat gently on the stove, adding a bit of extra broth if it thickens. It’s best to freeze only the dumplings and broth separately, as the texture of the greens may not hold up well when frozen.
