Ingredients
  

For the soup
  • 4 cups chicken or vegetable broth
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 cups greens (such as bok choy or spinach) Can substitute with kale.
  • salt and pepper, to taste
  • potstickers (store-bought or homemade) Cook according to package instructions.
  • green onions, chopped (for garnish)

Method
 

Preparation
  1. In a large pot, heat the sesame oil over medium heat.
  2. Add minced garlic and ginger, sautéing until fragrant, about 1 minute.
  3. Pour in the broth and bring it to a gentle simmer.
Cooking
  1. Add the potstickers to the pot, cooking according to package instructions, usually about 5-7 minutes.
  2. Stir in the greens and soy sauce, cooking until the greens are wilted, roughly 2-3 minutes.
  3. Season your soup with salt and pepper to taste.
Serving
  1. Serve hot, garnished with freshly chopped green onions.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on the stove over medium heat until warmed through. For freezing, store potstickers and broth separately to maintain texture.
