  • 1 pound ground beef or Italian sausage You can use ground turkey for a leaner option.
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 cups uncooked pasta (lasagna noodles, broken into pieces) Feel free to use any pasta; adjust cooking time as necessary.
  • 2 teaspoons Italian seasoning You can experiment with different herbs.
  • to taste Salt and pepper
  • for garnish Fresh basil or parsley
  • for serving Grated Parmesan cheese

Cooking
  1. In a large pot, brown your ground beef or sausage over medium heat, then drain any excess fat.
  2. Add in the chopped onions and minced garlic. Sauté them together until the onion becomes soft.
  3. Stir in the crushed tomatoes, broth, broken pasta, Italian seasoning, salt, and pepper. Bring this mixture to a full boil.
  4. Lower the heat and allow it to simmer for about 15-20 minutes, or until your pasta reaches the desired tenderness.
  5. Serve this comforting soup hot, garnished with fresh basil or parsley, and with a sprinkle of grated Parmesan cheese on top!

Notes

For best results, brown the meat well and consider adding a dollop of ricotta cheese right before serving for an extra creamy texture.
