  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated parmesan cheese for serving

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant.
  3. Toss in the diced chicken and cook until it’s browned on all sides.
  4. Stir in the diced tomatoes, chicken broth, spaghetti, Italian seasoning, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 15-20 minutes, until the spaghetti is tender and the liquid is absorbed.
  6. Serve hot, topped with a generous sprinkle of grated parmesan cheese.

Notes

Feel free to switch up the seasonings or use whole grain pasta for a healthier twist. It can be garnished with fresh basil or parsley.
