Preparation
- Prepare all the vegetables and herbs by slicing and julienning them as needed.
- Fill a shallow dish with warm water. Dip one rice paper wrap into the water for about 10-15 seconds until it becomes pliable.
- Lay the wrap flat on a clean surface.
- Begin layering the lettuce, veggies, and herbs in the center of the wrap, leaving enough space at the edges to fold over.
- Drizzle a little peanut sauce over the fillings.
- Fold the sides of the wrap over the filling, then roll it tightly from the bottom to the top.
- Repeat the process with the remaining wraps and filling.
Making Peanut Sauce
- For the peanut sauce, combine peanut butter with soy sauce, lime juice, and a touch of water until smooth.
Serving
- Serve the rolls with the peanut sauce for dipping.
Notes
These rolls can be stored in an airtight container in the refrigerator for up to two days. Keep the peanut sauce separate to maintain the rolls' freshness. Avoid freezing them as rice paper can become tough when thawed.
