  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 medium eggplant, diced
  • 1 medium bell pepper, diced
  • 2 medium tomatoes, chopped
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme

Method

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic; sauté until softened, about 5 minutes.
  3. Stir in the diced zucchini, eggplant, and bell pepper. Cook for another 5 minutes, allowing them to soften slightly.
  4. Add the chopped tomatoes, vegetable broth, and dried thyme. Season with salt and pepper to taste.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until all vegetables are tender.
  6. Serve hot, generously garnished with fresh basil.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. To enhance flavors, let the soup simmer longer. Add cooked lentils or chickpeas for protein and vary spices for different tastes.
